Preparations

  1. Heat oil in a large frying pan over low heat.
  2. Add the onions and a good pinch of salt and cook very slowly for 15-20 minutes, stirring occasionally to prevent them from catching. Don’t be tempted to turn the heat up, as you don’t want the onions to burn. When onions are softened and tinged golden, add sugar and balsamic – this will start the caramelization process. Cook onion over low heat for a further 5-10 minutes, stirring occasionally, until sticky and caramelized. Use immediately, or store in the fridge, in a sterilized jar or plastic container, and use when required.
  3. Place pitta bread on a flat surface and top it with Original Tofu Spread and caramelized onions. Serve with sliced tomatoes and parsley.

Preparations

  1. Line a bowl with spinach leaves, layering if necessary.
  2. Add avocado slices to one corner, chickpeas to another, grape tomatoes to another, sliced red onion and baby carrots to another.
  3. Add Original Tofu Spread to the center and top with sunflower or pumpkin seeds, if using.
  4. Sprinkle whole dish with salt and pepper and enjoy!

Tip. You can serve bowl with any flavor of Tofu Spread.

Preparations

  1. Preheat grill or frying pan to hot.
  2. Slice zucchini into thin circles. Brush one side of each strip with a little oil.
  3. Lay the zucchini slices, oil side down, on the hot surface. Cook for 2 minutes on each side until done. Sprinkle with sea salt.
  4. Slice the bread, spread Mexican Tofu Spread, and layer the zucchini on top.
  5. Add herbs if using, chilli flakes or chive.
  6. Top with other slice or leave open.
