Preparations

  1. Blend boiled chickpeas in the food processor until they have a paste-like consistency.
  2. Put them in a large bowl and blend in all the other ingredients, except oil and Mexican Tofu Spread.
  3. Heat some oil in a non-stick frying pan.
  4. Make the patties – 1 tbsp per patty.
  5. Fry them 2 minutes on each side.
  6. Put the falafels on a plate covered with a paper towel, in order to absorb all excess oil.
  7. Serve with Tofu Spread!

Preparations

  1. Preheat your oven to 400 degrees.
  2. Cover a cookie sheet with aluminum foil.
  3. For asparagus, trim off any woody ends and if the stalk is very thick use a vegetable peeler and shave off the thick outer flesh of the lower one third of the stalk to expose the most tender part.
  4. For broccoli, cut off florets into whole pieces.
  5. For carrots, cut off both ends and cut medium carrot sticks. Leave them whole. (Optional)
  6. Using your hands, toss the prepared Vegetables with the olive oil, salt and pepper and arrange in a single layer on the cookie sheet.
  7. Roast at 400 degrees in the center rack of your oven for 15-20 minutes (broccoli may take 25-30 min) turning over with a spatula half way through roasting for even cooking.
  8. Remove from the oven when the vegetables are tender and browned testing at 15 minutes and roasting longer if needed.
  9. Serve immediately with Savory Tofu Spread.

Preparations

  1. Begin with the chickpeas: preheat the oven to 350 degrees F.
  2. Toss the chickpeas with olive oil and spices, then transfer to a baking sheet.
  3. Bake for 35 – 45 minutes until chickpeas are golden brown and crispy, stirring around a few times throughout the cooking. Let cool and prepare remaining ingredients.
  4. Slice eggplant into ½ rounds. Brush with olive oil then season with salt and pepper on both sides. Grill over medium heat until seared on both sides, about 2–4 minutes per side. Transfer to a plate.
  5. Prepare two bowls, evenly distributing the Tofu Spread, basil, chickpeas and remaining ingredients. Sprinkle with lemon juice.
  6. Serve immediately and enjoy!
